Nettle Soup

As buds and catkins emerge, the vital force in our body begins to move. We may feel new bursts of energy or even agitation as our liver chi, much like the green world begins to sprout.

Our liver chi wants to move throughout our bodies unobstructed to create vitality in the body and growth in our lives.

Spring time is an excellent time to cleanse, or lighten the load on our bodies.

Here is a yummy, nourishing and wild recipe. It is beneficial for cleansing excess kapha. It is wonderful for nourishing the nervous system, the skin and hair with vital minerals. Nettle is also a great ally in moving stagnation, breaking up things that need to move out of the body.

RECIPE

Ingredients:

  • Big bag of Nettles (sustainably harvested in a toxin free environment) can do half with spinach if you like
  • ground cumin 1/2 tsp
  • ground tumeric 1/2 tsp
  • coriander seeds 1/2 tsp
  • salt 1/4 tsp
  • pepper 1/4 tsp
  • olive oil 1tbsp
  • half an onion or a small onion
  • can of coconut milk

Instructions:

Steam the Nettles until tender.

In a separate frying pan, with the olive oil fry the onion. After a couple minutes add all the spices, and the salt and pepper. When the onions are almost brown add in the coconut milk and let it simmer for a couple of minutes until it takes on the colour of the spices.

In a blender- put the steamed nettles and the spices/coconut milk into the blender. Blend until smooth.

I really like to put this soup on couscous or quinoa. To do so, soak the quinoa for half an hour before and then cook. Put it in the bowl and then add the soup on top. It makes it heartier and more filling.

*Always beneficial to soak legumes and grains before cooking them. Help to reduce their Vata aggravating nature.
